I think the oil has more to tell about the scientist.
The dull GCSE science answer:
Oli in water shaken lesens the number of van der vaals interractions between
water mollecules (breaks bonds requires energy input) and increases exposure
of hydrophic carbon groups in the oil (decreases entropy). The system must
lose free energy (according to scientists) and so prefers bond formation and
hydrophic concealment in the ensuing melee. Mixed oil and water favours
becoming seperate as it increases the net disorder in the system and evolves
energy. It prefers to return to the lowest possible energy conformation
available under the ambient conditions.
So to say that the universe favours dissapation though, is not necessarily
true, free enrgy equations just predict that you have to put energy into a
system in order to make it more ordered, but this also means that by making
a system more ordered (artificially) you absorb energy from the
surroundings, ie the system becomes "colder"/more efficient the more ordered
you make it. In a closed system volume takes effect.
As scientists disagree as to whether the universe is getting bigger or
smaller (and have no way to conceptualise its ambient surrounding), they
can't be sure whether its absorbing or losing energy. ie there's no
scientific veiw that our only purpose is dissapation.
Lets adopt the free energy eqautions as an analogy for the primary moral
order acting at the inorgainc level, apply this usage and then extrapolate
to other patterns:

The more ordered a static pattern becomes (higher levels), the more it will
"absorb DQ", if a static pattern becomes less ordered (degenerates) DQ will
leave it (death). Movement in both directions is thus positive feedback
controlled.

The more something changes the more prone to change it will become, things
that resist change will become ever more static and lifeless.
