To that the blood has to be drained and certain nerves removes. Certain
kosher dietary laws forbid the eating of the hind quarters of the animal.

In his book "on food and cooking" ( highly recommended), Harold McGee
mentions that an animal that has been stressed before slaughter will
produce a tougher tasting meat.
