ah. interesting to learn the exact details.

what harold McGee says is indeed true.  this is the logic behind the 
production of Kobe beef in Japan.  not only are the  cows massaged, but when 
they are walked (not transported 1000 miles in a truck) to the slaughter, 
they blow beer in their faces because the alcohol relaxes it.  then they 
knock it out.

it does have a lot of flavour, but its darn expensive.
